TASTING NOTES: intense yellow in colour, crystal-clear and nicely thick. On the nose it shows powerful aromas recalling yellow rose, lime and orange blossom, mimosa. Citrus fruit hints reminiscent of grapefruit and bergamot, then pineapple and medlar. Mineral notes, pistachio, marjoram and sage. On the palate is it full, with a fresh and full-flavoured start, and a finish showing a good aromatic length and citrus fruit hints recalling citron.
FOOD PAIRINGS: octopus and potato salad, charcoal-grilled sardines, paccheri with dried cod, tagliatelline with Acqualagna white truffle, monkfish stew, raw salmon, Casciotta d’Urbino cheese.
