TASTING NOTES: compact and deep ruby red in colour, thick with purplish highlights. On the nose, it shows fruity notes of blackberry, currant, cassis, sour cherry jam, flowery hints of violet and carnation, then herbaceous notes with ferrous and graphite overtones, humus, spices and china root.
Well-balanced on the palate, with thick fruity flavours and smooth, noble tannins, full-bodied and lingering, with a fruity, spicy and sweet finish.
FOOD PAIRINGS: baked loin of lamb with pink pepper, guinea fowl stew with onions and porcini mushrooms, sliced beef from Marche with traditional balsamic vinegar, Rossini-style tournedos.
